Eating As a Way to Remember the Past - Hélène Jawhara Piñer

“This proves the richness- how Sephardic culture is powerful because when you study Jewish Sephardic culture, this is not only about cooking, it’s about a way of life, a way of thinking. You have to take this as a whole, in fact, you think Jewish, you cook Sephardic food, and this has consequences in your life.”

For Episode 5 of “What’s Your FOODISH?” we welcome chef, author, teacher, FOODISH board member, and academic star in connecting the worlds of food, culture, and heritage, Hélène Jawhara Piñer. Hélène’s cookbook “Sephardi: Cooking the History. Recipes of the Jews of Spain and the Diaspora from the 13th Century to Today” won Gourmet Magazine’s award for Best Jewish Cookbook in 2021. A native of France, Hélène has extensively studied the anti-semitic nature of 12th century Spain and Italy through the lens of Jewish culinary practices, and she believes that, “eating is a way to remember the past and it is meaningful because, I think, that when you eat something and when you know about the origin of the dish and the history of the dish, so the dish tastes totally different.”

Today, Hélène speaks with FOODISH CEO, Merav Oren, about how she feels more Spanish than French (sorry Mom), how her grandmother keeps Jewish practices without knowing exactly why, and her deep love and respect for Maimonides. She tells us about her favorite dishes- Fideos with Tuna and Mint, Shakshouka, Hojuelas- how Shabbat is synonymous with homemade Challah, and she will always continue to eat the cake.

Home Is Your Family Table - Rob Eshman

“I like to let time work for me, instead of against me. You know, we tend to be fighting time all the time and racing and when you cook sourdough or when you make pickles or kombucha, or whatever, then time’s your friend, and time becomes another ingredient in the food.”

The guest for Episode 4 of “What’s Your FOODISH?” is Food Writer, Editor, Teacher, and Activist Rob Eshman. Rob is a native Californian of Ashkenazi descent whose childhood obsession with Pop Tarts ignited a lifelong love of recreating his favorite dishes. Rob speaks with FOODISH CEO, Merav Oren, about the way he connected to his Jewish identity during his time in Israel and the discovery of the importance of Shabbat dinner, “you have to celebrate, you have to pause, you have to eat well, you have to have some wine. Otherwise, one day bleeds into the next. That’s been such a powerful learning experience for me.”

Rob generously takes the time to tell us about everything from seasonal cooking from his garden, to how entertaining is a true talent, the ways in which he believes that food can deepen and heighten our experience to community, tradition, and even god, and how, for him, home is the place where you create your family table. He talks about raising chickens and goats in the middle of Venice, California, and that his ideal dinner party is our own FOODISH board- the guest list will knock your socks off. Give a listen.

Six Days a Week Sourdough, And One Day Challah - Silvia Nacamulli

“Everything always happened around the table. I start my book with that sentence, but I really
do think that really important things, relevant things often happen around food and the table.”

Episode 3 of “What’s Your FOODISH?” meets teacher, cook (not chef), caterer, and cookbook
author of “Jewish Flavors of Italy: A Family Cookbook”, Silvia Nacamulli. Born and raised in
Rome into the oldest Jewish community in the western world, Nacamulli notes that food, and
large quantities of it, were very important in her home. She spent 6 years in Israel during her
studies, and “the variety and really, the gastronomical mixture of spices and flavors that I
experienced in Israel was fabulous. And that I kind of inherited and brought it with me to London
and adapted it a little bit to my cooking.”

Today, Silvia tells FOODISH CEO Merav Oren about the secret of Italian cuisine- it is simple
and essential, with few ingredients and no rule breaking- and how she sees her book as a
legacy to that heritage, how Carciofi alla Romana (Roman-style Artichokes) are her favorite
dish, and how her family breaks the Yom Kippur fast with a bowl of light soup followed by an
    enormous barbeque.
