Chris and Stephen are clearly some of the most passionate and qualified folks studying the world of Japanese spirits on the planet earth. I’ve now started my shochu and awamori journey purely because of this podcast, and with their insight I feel hyper equipped to enjoy this wonderful tradition! Thank you! As an avid homebrewer and lover of Japanese culture, I couldn’t believe I had never heard of these indigenous spirits. I’m now so happy to take on this new study, and I have been discussing and spreading the shochu gospel with all of the professional and home brewers I know, including a pro sake brewer in my area (kasutori in our future?). Many a kanpai over shochu in my local community will commence as a result of this podcast. I’ve even started some koji ferments with a goal of making some shochu some day in the future.
