“Ingredients:-
1 cup carrot chopped
1 cup zucchini chopped
1/2 cup red capsicum chopped
1 onion finely chopped
2 celery stick chopped
1/2 cup mushrooms diced
2 tbs garlic minced
1 tbs oil
1 tbs basil
1 cup white wine
700 g beef mince
750 g tomato paste
Method:-
1 Heat oil and cook mince until just browned.
2 In a separate pan cook an onion for 2 minutes or until brown, then add garlic.
3 Add the other vegetables and cook until soft.
4 Reduce heat and add wine and basil. Add tomato paste and bring to the boil
5 Add mince and allow for it to simmer, stirring occasionally until pasta sauce has thickened. Taste and adjust seasoning.
6 Serve over your choice of pasta.
Recipe for 4, or 1 if you are manly enough! Haha
