Twenty months since posting the first, he has 13 million followers and more than a billion views across multiple platforms. Beaming in from his current home on Australia’s Sunshine Coast, he discusses his “surreal” success, the pressures of working in top restaurant kitchens and the state of New Zealand’s food scene.
