“I know Mongolia has a lot of fascinating and delicious milk curd foods as well, Airag is alcohol made from fermented mare’s milk, Aaruul is a dried curd, there is a clotted cream based dessert (khailmag). Really interesting rabbit hole to tangent on, especially because of how far back Mongolian culture’s relationship with milk goes. There is a study of gut biomes of Mongolian Nomads (Zhang et al., 2014) that led to the differential expression analysis, which provides insight into the molecular mechanisms of various diseases.
