There’s fuh and then there’s fuh and Eat Fuh is where it’s at. Before the opening of its permanent venue in Marrickville in 2016 and a second in Darlinghurst in 2018, Eat Fuh was known only to its dedicated market stall followers so when word got out they were moving to bricks and mortar it was a feeding frenzy. But this isn’t any old fuh joint, unlike other Vietnamese restaurants that have passed down recipes owner Hoang Nguyen says he is from a new generation of Vietnamese, reinventing and interpreting. Working together with his mother Hanh Ngoc Tang or as some call her Mama Pho, the pair are combining the ideas of other people and making it their own.
