Hi Jessie Sheehan, I just wanted to say how much I appreciate She’s My Cherry Pie. I love how you ask the guests so many specific details about their process. Listening to your podcast has greatly improved my baking and personal recipe development. I now understand a lot of the reasons why pastry chefs and bakers use certain techniques instead of just repeating steps from a cookbook. Even details like the colour of the aluminum pan impacting the browning on cookie bottoms that was discussed last episode is a game changer. Thank you!!
