Amazing research, historical materialism
The host’s deep interest in primary sources, the organization by century and food item which also follows a logical pattern re: the expansion of American settlement and the adoption of new technology and/or growth of immigration and settlement, and the unflinching look at how sugar and the slave trade depended on North America + how indigenous knowledge of land stewardship was destroyed + how land enclosure in the 17th century is directly connected to climate devastation today are all enough to recommend this to anyone . Great for casual food enthusiasts and amateur historians, it is helping me develop a better grounding in the material history of our world. Her voice is also nice to listen to!

This podcast is a great walk through American colonial history through the lens of food and the role that trade, religion and economics played in creating our current food landscape. And as a fellow chemistry nerd, I also enjoy her extra detail on the food science side of the story.
