would love some chat about the following when and why should you/not open your own place and if you do, what are some practical tips in regards to things like fitouts/hiring/suppliers/menu design etc referencing a piece from fool mag but what ideas/concepts you brought with you and what you left from each of your previous jobs, be it docket writing style, kitchen layout or horrible bathroom music. best and worst meals/dishes of your lives , licorice salmon talk about bars and spirits but not the lockouts (we've heard it and we all hate them) sydney restaurant history, was sweet hearing the old stories about tets and mark best have some farmrs/wine makers/brewers/distillers talk about the current state of booze in australia, tax issues, organic certification, growth of the craft industry, the big guys, supermarkets
