“Healthy” vegan, always looking to learn!
I listen to a lot of health and wellness podcasts on my walk to work everyday, and yours has quickly become my new favorite! I’ve been a “healthy” vegan for many years, but still would notice occasional tummy aches after eating certain foods (e.g. hummus) and I never understood why. It’s scary to think that some of my beloved plants could actually be harming me, but I greatly appreciate that you provide useful ideas for substitutes and cooking techniques to reduce my lectin intake. One question I’ve been wondering: Why/how does pressure cooking foods remove the lectins? I don’t really want to purchase a pressure cooker right now, can soaking beans/grains/potatoes and changing the water have the same effect, or do I need the pressure cooker? I’ve been listening to the Plant Paradox and CAN’T WAIT for The Longevity Paradox. Thanks for all the new knowledge, and keep up the good work!! -Amanda
