Today's guest is Kristjan Jekimov, head chef at renowned Estonian restaurant Põhjaka. Kristjan is an old friend of Tim & I, he was an OG bar tender at Möku and used to perform Stand Up with us back in the day. We talk about how Kristjan came to learn more about the chef game in some exclusive restaurants in Norway. His menu choices are influenced by some Nordic simplicity, South American flavors and his Korean upbringing. At Põhjaka they use as many fresh Estonian ingredients as possible and their reputation is definitely deserved. In the first half of the episode we talk about Kristjan's story over the past few years and into how Põhjaka aims to do everything from farm to plate.
