Dustin Joseph is a serial entrepreneur, chef, and coffee roaster based in Chiang Mai, Thailand. He’s also a mate of mine. Dustin has spent the past two decades exploring the world’s great food cultures, particularly in northern Thailand. He’s the founder of Left Hand Roasters, a coffee roasting and subscription company, and the owner of Cafecito, the best damn Mexican restaurant in Thailand (in my less than humble opinion). Dustin and I caught up at his kitchen table where I asked him about life as a chef, his incredibly ambitious culinary world tour, what makes food so important and interesting, what makes northern Thailand so special, and how we can all enjoy a better cup of coffee.
