Why is Brad's story so worth the time; well it's because he comes from a family tradition of producing Willicroft cheese. He has turned this knowledge and prowess into developing new processes to produce perfect Plant-Based 'cheeses'. To be honest Brad and his team are alchemists and here he shows us how. Brad explores the fine balance of moving from Dairy to non-dairy and says: 'it's too simplistic to attack dairy...' Needless to say he describes how we should be collaborating to drive change into the future.
