Insulin is like a key that unlocks a door in our muscle cells primarily so we can store sugar in the form of glycogen and use that for physical activity. And when we get too much fat in the muscle cells, eating this kind of standard Western diet – meat, dairy heavy – some of that fat ends up in the muscle. So it clogs up, jams up the lock from the inside so that insulin can't unlock the door, and so your sugar levels start to go up.
