When her husband was diagnosed with celiac disease, Pamela Schulte went on a mission to make the sweets and treats he still craved but couldn’t eat. She spent hours and hours refining recipes to take the “tasteless” out of gluten-free baking, and her husband was happy when she came up with some cookies, muffins, and cupcakes that were moist, delicious, and completely free of gluten.  Her quest became her passion, and Lucky Spoon Bakery was born.
