“Love this podcast, but I have a bone to pick about the “authentic” discussion. To only cook with foodstuff that is native to your homeland completely erases much of culinary history. Chiles and tomatoes both come from the Americas and are now very entwined in cuisines in Asia and Italy. Colonizers introduced their techniques and ingredients that have influenced many cuisines. We’re in a world were people constantly gatekeeper food (and other things) by claiming “authenticity”. It really does tie into the discussion on “farm to table” from the beginning of the episode. The word has really been diluted and twisted to the point where I often see “authentic” slapped onto a White person’s take on a traditional food claiming to have discovered it. The word simply doesn’t have a true meaning. If you’re claiming “authenticity” you’d have to leave the tomato sauce off your pizza too. Put whatever you want on your pizza, and judge people less for what they put on theirs. And just to be pedantic, pineapples are actually native to South America.”
