Skye Gyngell is an Australian-born chef who has spent much of her career shaping the British food scene. I first became aware of her cooking when I visited Petersham Nurseries’ cafe in Richmond, which she opened in 2004 and later earned it a Michelin star. Nowadays she runs her own beautiful restaurant, Spring, at Somerset House in London, and is the culinary director of Hampshire hotel Heckfield Place.
