I thought that you would talk about oyster farming on the east coast in the mid-1700s. The oyster beds had been so depleted by market harvesting that they were farming them by the acres in Chesapeake Bay. Literally tons of oysters were being harvested and sold. A lot was fresh and a lot were smoked and as I recall they were shipping up and down the east coast and even to London.”
