Gentrification is defined as the process of renovating a housing district so that it harmonizes to the taste of the middle-class. In other words, it’s a complicated turf war. Gentrification not only impacts the housing/commercial market, but also the food of a particular location. Inevitably corner stores become extinct, full-fledged grocery stores pop up, and smoothie palaces, juice bars, and organic produce become a “thing”.
