I’m an exec chef in Santa Fe, NM and love listening to other industry vets talk shop and get into the nitty gritty, good/ and bad, of what we do. You probably won’t have heard of many of the chefs unless you’re from Philly but it hasn’t mattered for me yet. The guests have all been great. It feels like you’re sitting with your industry friends having a beer and comparing notes on how you do things and of the ups and downs for the week.
