Sprezzatura
I tend to binge-listen The Eater Upsell; set a task and cue up a batch. There are so many reasons to do this, the primary one is that Helen and Greg demonstrate the Platonic Ideal of the culinary podcast. They have an informed perspective, that fans don’t have and industry professionals lack distance from, to bring listeners what’s actually interesting, challenging, and world-expanding. Even though they find themselves in the room with many renowned culinarians on the Pimp Train of Book/Show/Whatever publicity, Helen and Greg, by virtue of Eater’s food-centric mission, avoid the necessity of being a Terri Gross-level polymath and talk about important things in a fairly well-defined zone—often with side trips to interesting places. Their immersion and knowledge makes the difference. Like all the best interview podcasts (as well as focused topical conversations, like Slate Culture Gabfest and Pop Culture Happy Hour), they’re able to—and this is important—be us but more comfortably, and get to chat-up Significant People in our stead. We are grateful for the opportunity to eavesdrop. While talking with Mario Batali, Helen used the word “sprezzatura,” which means doing something really difficult and making it seem effortless. That’s this podcast.

Eater has access to such amazing industry insiders but the hosts are HORRIBLE interviewers! They have no flow, no insightful questions and they constantly interrupt the guest with goofy, dumb comments! The best episode by far has been the Danny Meyer episode.
