Dubai Anthropology Masquerading as a Food Show
Most cultural commentary on Dubai appears as if shot by drone: grand, sweeping, careful to note the endless ambitions of the place, but lacking intimacy. "Deep Fried" seems to me like the first attempt to understand the city at street level. There is so much to look forward to in each episode: the warmth and chemistry between the hosts and their team, bouncing off one another in wildly different accents even though they all probably grew up within 10K of each other; the effort made to understand the origins of dishes and celebrate rather than condemn any reinterpretations; the treatment of food as a portal into a culture and a life; the conviction that eating well has little correlation with eating posh. A perfect example is the "Vimto" episode- there's a genuine curiosity to get to the bottom of why a random cocktail of mysterious grapes from the U.K. became to Ramadan what cranberry sauce is to Thanksgiving. The hosts are partial to forensic culinary adventures, and tap into a solid network of chefs, restaurant owners and historians to be their shamans. Dubaians often live as if they're in The Sims, staying within confined zones for dining and experimenting only within reason. This show continuously steps out of bounds.
