Informative - right from the cow’s mouth :)
I’m not calling them Cow’s, but it is very interesting to hear farmer’s perspectives on trying to maintain a recipe that was passed down, while trying to keep up with modern industry. Makes you appreciate the time and pride that goes into maintaining quality cheese. Then from there to the cheese seller’s selling a product that could be the same brand and name, but could taste different each batch. Studying cheese is a new passion of mine and I found this very informative. Keep it up !
