Enjoyable trip through the kitchens and produce providers
Tommy takes you through some of the characters populating the kitchens at Black Swan and Roots. The podcast doesn’t focus on Tommy, far from it, he is a humble overseer to narrate everything. I found the recent Michelin episode to be a really honest commentary about how difficult it is psychologically when an annual renewal comes due…will stars go up, or be removed altogether? Phew it is scary for a chef, especially if you have two restaurants like Tommy. One suggestion I’d make: ensure that each and every podcast has an accompanying set of photos on Tommy’s webpage, and a nice link to find them, so we can see some of the faces and places without having to search the internet to find random photos.
